Marry Me Chicken
Ingredients:
4 boneless, skinless chicken breasts
2 tbsp olive oil
1/2 cup chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/2 cup sun-dried tomatoes, chopped
3 cloves garlic, minced
1 tsp dried oregano
1 tsp dried thyme
1/2 tsp crushed red pepper flakes (optional, for heat)
Salt and pepper, to taste
Fresh basil or parsley, for garnish
Instructions:
Preheat the oven:
Preheat your oven to 375°F (190°C).
Season and sear the chicken:
Season the chicken breasts with salt and pepper on both sides. In a large oven-safe skillet, heat the olive oil over medium heat.
Sear the chicken breasts for about 4-5 minutes per side, until they are golden brown. Transfer the chicken to a plate and set aside (they don’t need to be fully cooked yet).
Make the sauce:
In the same skillet, add the minced garlic and sauté for 1 minute until fragrant.
Stir in the chicken broth, scraping up any browned bits from the bottom of the skillet. Add the heavy cream, Parmesan cheese, sun-dried tomatoes, oregano, thyme, and crushed red pepper flakes (if using). Bring the sauce to a simmer, stirring occasionally until it thickens slightly, about 3-4 minutes.
Combine the chicken and sauce:
Return the chicken breasts to the skillet, nestling them into the sauce. Spoon some of the sauce over the chicken.
Bake:
Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is fully cooked through and reaches an internal temperature of 165°F (75°C).
Garnish and serve:
Remove the skillet from the oven and garnish with freshly chopped basil or parsley.
