2 large sweet potatoes, peeled and thinly sliced

1 cup heavy cream

½ cup grated Gruyère or Parmesan cheese

2 tablespoons unsalted butter, melted

Preheat Oven
Preheat oven to 375°F (190°C). Grease a 9×9-inch (or similar size) baking dish with butter or cooking spray. -
Prepare Maple Mixture
In a small bowl, combine maple syrup and minced garlic. Set aside. -
Layer Vegetables
Arrange sweet potato and beet slices in alternating layers in the prepared dish. Brush each layer lightly with the maple-garlic mixture. Season with salt, pepper, and a pinch of nutmeg, if using. -
Add Cream & Butter
Pour heavy cream evenly over the layered vegetables. Drizzle melted butter on top for richness. -
Sprinkle Cheese & Thyme
