Ingredients:
1 cup all-purpose flour
1 tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup buttermilk
1 large egg
2 tablespoons unsalted butter, melted
1/2 teaspoon vanilla extract
1/2 cup cooked bacon, chopped
1/4 cup maple syrup (plus extra for serving)
Instructions:
Preheat the Oven:
Preheat your oven to 350°F (175°C). Lightly grease a mini muffin tin or line with mini muffin paper liners.
Mix the Dry Ingredients:
In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
Mix the Wet Ingredients:
In another bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract.
Combine Ingredients:
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix. Gently fold in the chopped bacon and 1/4 cup maple syrup.
Fill the Muffin Tin:
Spoon the batter into the prepared mini muffin tin, filling each cup about 2/3 full.
Bake:
Bake in the preheated oven for 10-12 minutes, or until the pancake bites are golden brown and a toothpick inserted into the center comes out clean.
Serve:
Remove from the oven and let cool slightly in the muffin tin before transferring to a wire rack. Serve warm with additional maple syrup for dipping.
