Maple, Bacon, Pancake Bites
Ingredients:
1 cup pancake mix (store-bought or homemade)
3/4 cup milk
1 large egg
1/4 cup maple syrup
1 tsp vanilla extract
6 slices bacon, cooked and crumbled
1/4 cup butter, melted
1 tbsp brown sugar
Maple syrup for drizzling (optional)
Directions:
Prepare the Pancake Batter:
In a mixing bowl, combine the pancake mix, milk, egg, maple syrup, and vanilla extract. Whisk until smooth, with no lumps. Let the batter rest for a few minutes.
Cook the Bacon:
In a skillet, cook the bacon until crispy. Once done, remove from the skillet, crumble it into small pieces, and set aside.
Preheat the Oven:
Preheat the oven to 350°F (175°C) and grease a mini muffin pan or line it with mini muffin liners.
Assemble the Pancake Bites:
Pour the pancake batter into each muffin cup, filling them about 3/4 of the way full. Sprinkle the crumbled bacon evenly over the top of each cup.
In a small bowl, mix the melted butter with brown sugar. Drizzle a little of the mixture over each pancake bite for a sweet and buttery glaze.
Bake:
Place the muffin pan in the oven and bake for 12-15 minutes, or until the pancake bites are golden brown and cooked through (a toothpick inserted into the center should come out clean).
Serve:
Remove from the oven and let the bites cool slightly before drizzling them with extra maple syrup. Serve warm.
