Magic Lemon Cobbler Recipe
Ingredients:
1/2 cup (1 stick) unsalted butter
1 cup all-purpose flour
1 cup granulated sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 cup milk
1 teaspoon vanilla extract
Zest of 1 lemon
1 cup lemon curd (store-bought or homemade)
1 1/2 cups hot water
Powdered sugar (for dusting, optional)
Instructions:
Preheat Oven:
Preheat your oven to 350°F (175°C).
Melt Butter:
Place the butter in a 9×13-inch baking dish. Put the dish in the oven to melt the butter while the oven preheats. Keep an eye on it to make sure it doesn’t burn.
Prepare Batter:
In a medium bowl, whisk together the flour, granulated sugar, baking powder, and salt. Add the milk, vanilla extract, and lemon zest, and stir until just combined. The batter will be slightly lumpy, which is fine.
Assemble Cobbler:
Once the butter is melted, carefully remove the baking dish from the oven. Pour the batter over the melted butter, but do not stir. Spoon the lemon curd evenly over the batter. Pour the hot water over the top, but do not stir. This will create a unique layering effect as it bakes.
Bake:
Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and the cobbler is set. The magic happens as the layers switch places during baking, creating a gooey lemon filling beneath a tender, cake-like topping.
Cool and Serve:
Allow the cobbler to cool for a few minutes before serving. Dust with powdered sugar if desired. Serve warm, preferably with a scoop of vanilla ice cream or a dollop of whipped cream.
