Magic Lemon Cobbler

Magic Lemon Cobbler
Ingredients:
For the Batter:
1 cup granulated sugar
1 cup all-purpose flour
1 1/2 tsp baking powder
1/4 tsp salt
1 cup milk
1/2 cup unsalted butter, melted
For the Lemon Mixture:
1 cup granulated sugar
1/2 cup fresh lemon juice (about 2 lemons)
2 cups water
1 tsp lemon zest
For Serving:
Whipped cream or vanilla ice cream (optional)
Directions:
Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or similar size dish.
Prepare the Batter:
In a large mixing bowl, whisk together the sugar, flour, baking powder, and salt.
Add the milk and melted butter. Stir until the mixture is smooth and combined. The batter will be somewhat thick.
Pour the Batter:
Pour the batter into the prepared baking dish, spreading it evenly.
Prepare the Lemon Mixture:
In a separate bowl, mix together the sugar, lemon juice, water, and lemon zest. The mixture will be quite liquid.
Add the Lemon Mixture:
Gently pour the lemon mixture over the batter in the baking dish. Do not stir; the lemon mixture will settle and create a sauce while baking.
Bake the Cobbler:
Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and the cobbler is set. The edges will be crisp, and the center will be slightly gooey.
Cool and Serve:
Allow the cobbler to cool slightly before serving. Serve warm with whipped cream or vanilla ice cream if desired.
