Magic Lemon Cobbler
Ingredients:
1/2 cup unsalted butter
1 cup all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup granulated sugar
1 cup milk
1 teaspoon vanilla extract
1 can (21 oz) lemon pie filling (or homemade lemon curd)
1 tablespoon lemon zest (optional, for extra flavor)
Instructions:
Preheat Oven:
Preheat your oven to 350°F (175°C).
Melt the Butter:
Place the butter in a 9×13-inch baking dish and put it in the oven until the butter is melted. Remove from the oven and set aside.
Prepare the Batter:
In a medium bowl, whisk together the flour, baking powder, salt, and granulated sugar.
Add the milk and vanilla extract, stirring until just combined.
Assemble the Cobbler:
Pour the batter over the melted butter in the baking dish. Do not stir.
Spoon the lemon pie filling evenly over the batter. Do not mix it in; just drop spoonfuls here and there. Sprinkle lemon zest over the top if using.
