Ingredients:
1/2 cup unsalted butter (melted)
1 cup all-purpose flour
1 cup granulated sugar
2 tsp baking powder
1/4 tsp salt
1 cup milk
Zest of 2 lemons
1/4 cup fresh lemon juice
1 cup water
1/4 cup granulated sugar (for sprinkling on top)

Instructions:
Preheat the oven:
Preheat your oven to 350°F (175°C).
Melt the butter:
Pour the melted butter into the bottom of a 9×9-inch (or similar size) baking dish. Set aside.
Prepare the batter:
In a medium bowl, whisk together the flour, 1 cup of granulated sugar, baking powder, and salt. Stir in the milk and lemon zest until just combined. Be careful not to overmix.
Assemble the cobbler:
Pour the batter evenly over the melted butter in the baking dish, but do not stir. Pour the fresh lemon juice and water over the batter (again, do not stir).
Add the sugar topping:
Sprinkle the remaining 1/4 cup of granulated sugar over the top of the cobbler.
Bake the cobbler:
Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and set. The cobbler will form layers, with a gooey lemon curd at the bottom and a cake-like crust on top.
Cool and serve:
Let the cobbler cool for a few minutes before serving. It’s delicious on its own, but you can also serve it with a scoop of vanilla ice cream or a dollop of whipped cream.
