Mac and Cheese Meatloaf Casserole
A delicious twist on two classic comfort foods—meatloaf and mac & cheese—combined into one ultimate casserole!
Ingredients:
For the Meatloaf Layer:
1 pound (450g) lean ground beef
15 Ritz-style crackers, crushed
1 egg
1/2 cup milk
1 small onion, finely chopped
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
1/4 cup ketchup
1 tablespoon Worcestershire sauce
1 teaspoon dried Italian seasoning
For the Mac and Cheese Layer:
1 box (about 7.25 oz) macaroni and cheese
2 tablespoons butter
1/4 cup milk
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
Instructions:
Preheat your oven to 350°F (175°C) and grease a casserole dish.
Make the Meatloaf Layer:
In a large bowl, combine the ground beef, crushed crackers, egg, milk, chopped onion, garlic powder, black pepper, ketchup, Worcestershire sauce, and Italian seasoning.
Mix until just combined.
Form the mixture into a loaf shape and place it in the casserole dish. Bake for 30 minutes.
Prepare the Mac and Cheese Layer:
While the meatloaf bakes, prepare the macaroni and cheese according to the package instructions. Once the macaroni is cooked, stir in the butter, milk, cheddar, and mozzarella cheese until melted and creamy.
Assemble the Casserole:
Once the meatloaf has baked for 30 minutes, remove it from the oven.
Spread the prepared mac and cheese over the meatloaf layer in the casserole dish.
Return to the oven and bake for an additional 15-20 minutes, until the top is golden and bubbly.
