Luscious Key Lime Cheesecake Delight
Ingredients:
For the Crust:
– 1 1/2 cups graham cracker crumbs
– 1/4 cup granulated sugar
– 1/2 cup unsalted butter, melted
For the Cheesecake Filling:
– 24 ounces cream cheese, softened
– 1 cup granulated sugar
– 3 large eggs
– 1/2 cup sour cream
– 1/2 cup key lime juice
– 1 tablespoon key lime zest
– 1 teaspoon vanilla extract
For the Topping:
– 1 cup heavy whipping cream
– 1/4 cup powdered sugar
– Key lime slices, for garnish (optional)
Directions:
1. Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan.
2. In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Press the mixture into the bottom of the prepared pan to form the crust. Set aside.
3. In a large mixing bowl, beat the cream cheese and granulated sugar until smooth and creamy.
4. Add the eggs, one at a time, beating well after each addition.
5. Mix in the sour cream, key lime juice, key lime zest, and vanilla extract until well combined.
6. Pour the cheesecake filling over the crust in the springform pan.
7. Bake in the preheated oven for 50-60 minutes, or until the center is set and the edges are lightly golden.
8. Allow the cheesecake to cool to room temperature, then refrigerate for at least 4 hours, or overnight.
9. In a medium bowl, whip the heavy cream and powdered sugar together until stiff peaks form. Spread or pipe the whipped cream over the chilled cheesecake.
10. Garnish with key lime slices, if desired, before serving.
