Lumpiang Sariwa (Filipino Fresh Spring Rolls)

Ingredients:
10 rice paper wrappers
1 cup cooked shrimp, peeled and chopped
1 cup cooked chicken breast, shredded
1 cup lettuce, shredded
1/2 cup carrots, julienned
1/2 cucumber, julienned
1/4 cup fresh cilantro, chopped
1/4 cup crushed peanuts
1/4 cup soy sauce
1 tbsp rice vinegar
1 tbsp sugar
1/2 cup garlic, minced
1/2 cup water

Directions:
In a small bowl, mix soy sauce, rice vinegar, sugar, and water to create a dipping sauce. Set aside.
Dip each rice paper wrapper in warm water for about 10-15 seconds until soft.
Lay the softened rice paper on a flat surface.
In the center of the wrapper, place a handful of lettuce, followed by shrimp, chicken, carrots, cucumber, and cilantro.
Sprinkle with crushed peanuts for extra texture.
Fold the sides of the rice paper over the filling, then roll tightly to form a fresh lumpia.
Serve with dipping sauce and enjoy!
