Low-Carb Zucchini Pizza Snacks
Ingredients:
– 2 large zucchinis, sliced into 1/4-inch rounds
– 1/2 cup marinara sauce
– 1 cup shredded mozzarella cheese
– 1/4 cup grated Parmesan cheese
– 1/2 teaspoon dried oregano
– 1/2 teaspoon garlic powder
– Salt and pepper to taste
– Optional toppings: mini pepperoni slices, sliced black olives, diced bell peppers, fresh basil
Directions:
1. Preheat your oven to 400°F (200°C).
2. Arrange the zucchini slices on a baking sheet lined with parchment paper. Lightly season with salt, pepper, garlic powder, and dried oregano.
3. Top each zucchini slice with a small spoonful of marinara sauce.
4. Sprinkle mozzarella and Parmesan cheese evenly over the zucchini slices.
5. Add any additional toppings if desired (mini pepperoni, olives, bell peppers, etc.).
6. Bake in the preheated oven for 8-10 minutes, or until the cheese is melted and bubbly.
7. Remove from the oven and let cool slightly before serving. Garnish with fresh basil if desired.
