Low Carb Unstuffed Cabbage Casserole Recipe
Ingredients:
1 lb ground beef (or ground turkey)
1 small onion, chopped
3 cloves garlic, minced
1 small head of cabbage, chopped
1 can (14.5 oz) diced tomatoes, undrained
1 can (8 oz) tomato sauce
1/2 cup beef broth
1 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
1 cup shredded mozzarella cheese (optional)
Fresh parsley, chopped (for garnish)
Instructions:
Preheat the Oven:
Preheat your oven to 375°F (190°C).
Cook the Beef:
In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat. Add the chopped onion and minced garlic to the skillet and cook until the onion is translucent.
Add the Cabbage and Tomatoes:
Add the chopped cabbage to the skillet and cook until it starts to soften, about 5 minutes. Stir in the diced tomatoes (with juice), tomato sauce, and beef broth.
Season:
Add the dried thyme, dried oregano, paprika, salt, black pepper, and red pepper flakes (if using). Stir to combine and let the mixture simmer for 10 minutes, allowing the flavors to meld.
Transfer to Baking Dish:
Transfer the mixture to a 9×13-inch baking dish. Spread it out evenly.
Bake:
Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
Add Cheese (Optional):
If using, remove the foil and sprinkle the shredded mozzarella cheese over the top. Return to the oven and bake uncovered for an additional 10-15 minutes, or until the cheese is melted and bubbly.
Serve:
Remove from the oven and let the casserole cool for a few minutes. Garnish with chopped fresh parsley before serving.
