Low Carb Unstuffed Cabbage Casserole

Ingredients:
1 medium head of cabbage, chopped
1 lb ground beef (or turkey)
1 medium onion, diced
2 cloves garlic, minced
1 can (15 oz) diced tomatoes, undrained
1 can (8 oz) tomato sauce
2 cups beef broth
2 tsp Italian seasoning
1 tsp paprika
1/2 tsp salt
1/4 tsp black pepper
1/2 cup shredded cheddar cheese (optional)
2 tbsp olive oil (for cooking)

Directions:
Preheat the Oven:
Preheat your oven to 350°F (175°C).
Cook the Cabbage:
In a large skillet, heat the olive oil over medium heat. Add the chopped cabbage and cook for about 5-7 minutes, stirring occasionally, until it starts to soften. Remove the cabbage from the skillet and set aside.
Brown the Meat:
In the same skillet, add the ground beef and cook until browned. Drain any excess fat. Add the diced onion and minced garlic, cooking until the onion becomes translucent, about 3-4 minutes.
Combine Ingredients:
Stir in the diced tomatoes (with juices), tomato sauce, beef broth, Italian seasoning, paprika, salt, and pepper. Bring the mixture to a simmer.
Layer the Casserole:
In a greased 9×13-inch baking dish, layer half of the cooked cabbage on the bottom. Pour half of the meat mixture over the cabbage. Repeat the layers with the remaining cabbage and meat mixture.
Add Cheese (Optional):
If desired, sprinkle the shredded cheddar cheese on top of the casserole.
Bake:
Cover the baking dish with aluminum foil and bake for 30-35 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
Serve:
Allow the casserole to cool for a few minutes before serving. Enjoy!
