Low Carb Unstuffed Cabbage Casserole
Ingredients:
1 lb ground beef (or ground turkey)
1 small onion, diced
2 cloves garlic, minced
1 small head green cabbage, chopped
1 can (14.5 oz) diced tomatoes, undrained
1 can (8 oz) tomato sauce
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon smoked paprika
Salt and pepper, to taste
1 cup shredded mozzarella cheese
Instructions:
Preheat the Oven:
Preheat your oven to 375°F (190°C).
Grease a 9×13-inch baking dish.
Cook the Beef:
In a large skillet over medium heat, cook the ground beef, diced onion, and minced garlic until the beef is browned and the onion is translucent. Drain any excess fat.
Add the Cabbage:
Add the chopped cabbage to the skillet and cook for about 5 minutes, until the cabbage starts to soften.
Mix in the Tomatoes and Spices:
Stir in the diced tomatoes (with juice), tomato sauce, dried oregano, dried basil, smoked paprika, salt, and pepper.
Simmer for 10 minutes, allowing the flavors to meld and the cabbage to cook down slightly.
Assemble the Casserole:
Transfer the cabbage and beef mixture to the prepared baking dish.
Sprinkle the shredded mozzarella cheese evenly over the top.
Bake:
Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
Serve:
Remove from the oven and let the casserole cool slightly before serving.
