Loaded Potato Meatloaf Casserole
A delicious twist on a classic meatloaf, this loaded potato meatloaf casserole is packed with flavors and perfect for a hearty family dinner!
Ingredients:
1 lb ground beef, extra lean
1/2 cup onion, diced
2 tbsp brown sugar
1 tbsp Worcestershire sauce
1 cup seasoned Italian bread crumbs
1 egg
Instructions:
Prepare the Meatloaf Mixture:
In a large mixing bowl, combine the ground beef, diced onion, brown sugar, Worcestershire sauce, bread crumbs, and egg. Mix until everything is well combined.
Form the Meatloaf:
Transfer the meat mixture to a greased casserole dish, shaping it into a loaf shape. You can press it into the dish to make sure it’s evenly distributed.
Bake:
Preheat your oven to 375°F (190°C). Bake the meatloaf in the preheated oven for 30 minutes.
Prepare the Loaded Potatoes:
While the meatloaf is baking, prepare your favorite mashed potatoes (either homemade or using instant mashed potatoes). Stir in some shredded cheddar cheese, cooked bacon bits, and sour cream for that “loaded” flavor. Set aside.
Assemble the Casserole:
After 30 minutes, remove the meatloaf from the oven. Spread the loaded mashed potatoes over the top of the meatloaf, covering it evenly.
Finish Baking:
Return the casserole to the oven and bake for an additional 10-15 minutes or until the potatoes are golden and bubbly.
Serve:
Once done, remove from the oven and let cool for a few minutes before serving.
Tips:
For extra flavor, top the casserole with extra shredded cheese and bacon bits just before baking for a crispy topping.
You can add some chopped green onions or chives to the mashed potatoes for a fresh, vibrant flavor.
