Loaded Potato Bites
Ingredients:
1 lb baby potatoes, halved
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
1 cup shredded cheddar cheese
1/2 cup cooked bacon bits
1/4 cup sour cream
2 tablespoons chopped fresh chives
2 tablespoons chopped fresh parsley (optional)
Directions:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, toss the halved baby potatoes with olive oil, garlic powder, paprika, salt, and black pepper until well coated.
Arrange the potatoes cut-side down on the prepared baking sheet. Roast in the preheated oven for 20-25 minutes, or until the potatoes are tender and golden brown.
Remove the baking sheet from the oven and sprinkle shredded cheddar cheese over the potatoes. Return to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
Remove from the oven and top with cooked bacon bits. Drizzle with sour cream and sprinkle with chopped chives and parsley if desired.
