Limoncello Mascarpone Cake 🍋

Ingredients:
1 cup mascarpone cheese
1/2 cup limoncello liqueur
1 cup granulated sugar
3 large eggs
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
2 tablespoons freshly grated lemon zest
1 teaspoon vanilla extract
1/4 teaspoon salt
1/2 cup heavy cream
Powdered sugar, for dusting (optional)
Lemon slices and mint leaves, for garnish (optional)
Instructions:
Preheat oven:
Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line with parchment paper.
Mix wet ingredients:
In a large mixing bowl, beat the mascarpone cheese, sugar, and eggs until smooth and creamy. Add the limoncello, lemon zest, vanilla extract, and heavy cream. Mix until fully incorporated.
Combine dry ingredients:
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
Combine everything:
Gradually add the dry ingredients to the wet mixture, mixing just until combined. Do not overmix.
Bake:
Pour the batter into the prepared cake pan. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
Cool and serve:
Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Dust with powdered sugar and garnish with lemon slices and mint leaves before serving, if desired.
