LIME MOUSSE CHEESECAKE
Ingredients
For the Crust:
1½ cups graham cracker crumbs
¼ cup granulated sugar
6 tbsp melted butter

For the Cheesecake Base:
2 (8 oz) blocks cream cheese, softened
½ cup granulated sugar
1 tsp vanilla extract
2 tbsp fresh lime juice
1 tsp lime zest
1½ tsp gelatin powder
3 tbsp warm water

For the Lime Mousse Layer:
1 cup heavy whipping cream
3 tbsp powdered sugar
2 tbsp fresh lime juice
1 tsp lime zest

Topping (Optional):
Sweetened whipped cream
Lime slices or zest
Mint leaves
Green glaze drizzle

Instructions
1. Prepare the Crust:
Preheat oven to 325°F (160°C).
Mix graham crumbs, sugar, and melted butter.
Press into the bottom of an 8-inch square pan.
Bake for 10 minutes and cool completely.
2. Make the Cheesecake Base:
Dissolve gelatin in warm water and let bloom.
Beat cream cheese and sugar until smooth.
Add vanilla, lime juice, and zest.
Stir in gelatin until fully incorporated. Set aside.
3. Make the Lime Mousse:
In a separate bowl, whip heavy cream with powdered sugar until soft peaks form.
Fold in lime juice and zest gently.
4. Combine and Chill:
Fold whipped mousse into cheesecake mixture until fully combined.
Pour over the cooled crust and smooth the top.
Chill for at least 4 hours or overnight.
5. Garnish & Serve:
Top with whipped cream, lime slices, zest, and glaze if desired.
