Lemonade Puppy Chow
Ingredients:
5 cups Rice Chex cereal (or similar cereal)
1 cup white chocolate chips or white candy melts
1/4 cup lemon juice (freshly squeezed for the best flavor)
1/2 tsp lemon zest (optional, for extra lemony flavor)
1 1/2 cups powdered sugar
1 small packet of instant lemonade mix (around 0.23 oz) or 1-2 tablespoons, depending on tartness preference
Yellow food coloring (optional, for a bright lemony look)
Directions:
Prepare the Coating:
In a microwave-safe bowl, melt the white chocolate chips or candy melts in 15-second intervals, stirring between each until smooth. Once melted, add the lemon juice and lemon zest (if using) and stir until well incorporated. If you’d like a vibrant yellow color, add a few drops of yellow food coloring.
Coat the Cereal:
Place the Rice Chex cereal in a large mixing bowl. Pour the melted chocolate mixture over the cereal and gently fold until all pieces are evenly coated.
Add the Powdered Mixture:
In a separate large zip-top bag, combine the powdered sugar and instant lemonade mix. Seal the bag and shake to mix. Add the coated cereal to the bag, seal it tightly, and shake until all cereal pieces are coated with the lemonade-powdered sugar mixture.
Cool and Serve:
Pour the coated puppy chow onto a lined baking sheet to cool and dry for about 10-15 minutes. Once set, transfer to a serving bowl or store in an airtight container.
