Lemon Garlic Chicken Bites

Lemon Garlic Chicken Bites

Ingredients:
1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
2 tablespoons olive oil
3 tablespoons butter
6 cloves garlic, minced
Juice of 1 large lemon (about 2-3 tablespoons)
1 teaspoon lemon zest
1 teaspoon paprika
½ teaspoon garlic powder
½ teaspoon onion powder
Salt and pepper, to taste
¼ teaspoon red pepper flakes (optional, for heat)
2 tablespoons fresh parsley, chopped (for garnish)
Lemon slices, for serving (optional)

Instructions:
Step 1: Season the Chicken
In a bowl, toss the chicken pieces with paprika, garlic powder, onion powder, salt, and pepper to season the chicken evenly.
Step 2: Cook the Chicken
Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
Add the seasoned chicken to the skillet and cook, stirring occasionally, for about 5-7 minutes until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.
Step 3: Make the Lemon Garlic Sauce
In the same skillet, melt the remaining 2 tablespoons of butter over medium heat.
Add the minced garlic and sauté for about 30 seconds until fragrant.
Stir in the lemon juice, lemon zest, and red pepper flakes (if using). Let the sauce simmer for 1-2 minutes to thicken slightly.
Step 4: Combine Chicken with Sauce
Add the cooked chicken bites back to the skillet, tossing them in the lemon garlic sauce until they are well coated and heated through, about 2-3 minutes.
Step 5: Serve
Remove the skillet from heat and sprinkle the chicken with fresh parsley.
Serve with lemon slices on the side for extra zest.
