Lemon Garlic Chicken Bites
Ingredients:
1 lb chicken breasts (cut into bite-sized pieces)
3 tbsp olive oil (divided)
2 tbsp butter
4 cloves garlic (minced)
Zest of 1 lemon
Juice of 1 lemon
1 tsp dried oregano
1/2 tsp paprika
Salt and pepper (to taste)
Fresh parsley (chopped for garnish)
Lemon wedges (for serving)
Directions:
Prepare the Chicken:
Season the chicken bites with paprika, oregano, salt, and pepper.
In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
Sear the Chicken:
Add the seasoned chicken bites to the hot skillet. Cook for 4-5 minutes on each side, or until golden brown and fully cooked. Remove the chicken from the skillet and set aside.
Make the Lemon Garlic Sauce:
In the same skillet, reduce the heat to medium. Add 1 tablespoon of olive oil and 2 tablespoons of butter. Once the butter is melted, add the minced garlic and sauté for about 30 seconds, until fragrant.
Stir in the lemon zest and lemon juice, scraping any browned bits from the bottom of the skillet.
Combine and Cook:
Return the chicken bites to the skillet and toss them in the lemon garlic sauce. Cook for another 2-3 minutes, allowing the chicken to absorb the flavors.
Garnish and Serve:
Remove from heat and garnish with freshly chopped parsley.
Serve with lemon wedges on the side for an extra burst of citrus.
