🍋 Lemon Curd Crème Brûlée Cookies
Buttery lemon sugar cookies filled with bright lemon curd and finished with a brûléed sugar topping. A fancy treat made easy!

🛒 Ingredients:
For the Cookies:

1 ½ cups all-purpose flour

½ cup unsalted butter, softened

¾ cup granulated sugar

1 large egg

1 tablespoon lemon zest

2 tablespoons lemon juice (fresh is best!)

1 teaspoon vanilla extract

½ teaspoon baking powder

¼ teaspoon salt

For Filling & Topping:

½ cup lemon curd (store-bought or homemade)

Extra granulated sugar for brûlée topping

👨‍🍳 Instructions:
Prep & Preheat
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

Make the Dough
In a mixing bowl, cream together the butter and sugar until light and fluffy (about 2–3 minutes).
Add the egg, lemon zest, lemon juice, and vanilla extract. Mix until well combined.
In a separate bowl, whisk together flour, baking powder, and salt. Gradually add dry ingredients to the wet mixture and mix until a soft dough forms.

Shape Cookies
Scoop dough into tablespoon-sized balls. Place them on the baking sheet, spaced about 2 inches apart.
Use your thumb or the back of a spoon to make an indent in the center of each cookie.

Fill & Bake
Spoon about ½ teaspoon of lemon curd into the indent of each cookie.
Bake for 10–12 minutes or until the edges are lightly golden. Allow cookies to cool completely on a wire rack.

Brûlée the Tops
Once cooled, sprinkle a thin layer of granulated sugar on top of the lemon curd. Use a kitchen torch to carefully caramelize the sugar until golden and crisp. Let the sugar cool and harden before serving.

💡 Tips:
Don’t have a kitchen torch? You can try broiling the cookies for 1–2 minutes, watching closely to avoid burning.

Store cookies in an airtight container in the fridge for up to 3 days — brûlée just before serving for the best crunch!
