🦪 Lemon Butter Scallops

Juicy, golden-seared scallops coated in a silky lemon-butter sauce — perfect for a quick weeknight dinner or an elegant date-night dish.


Ingredients (Serves 2–3)

  • 500 g fresh scallops, patted dry

  • 3 tbsp unsalted butter

  • 2 tbsp olive oil

  • 3 cloves garlic, minced

  • Juice of 1 lemon (plus extra wedges for serving)

  • Zest of ½ lemon

  • 2 tbsp fresh parsley, chopped

  • Salt and black pepper, to taste


Instructions

1️⃣ Prepare the Scallops
Pat scallops dry with paper towels — this is key for achieving a golden crust. Season lightly with salt and pepper.

2️⃣ Sear the Scallops
Heat olive oil and 1 tbsp butter in a skillet over medium-high heat.
Place scallops in the pan (don’t overcrowd) and sear 2 minutes per side until golden brown. Remove scallops and set aside.

3️⃣ Make the Lemon Butter Sauce
Lower the heat. Add garlic to the pan and sauté for 30 seconds until fragrant.
Stir in remaining butter, lemon juice, and zest until melted and combined.

4️⃣ Combine and Finish
Return scallops to the skillet and spoon the lemon butter sauce over them. Cook for 1 more minute to warm through.

5️⃣ Garnish and Serve
Sprinkle with fresh parsley and serve immediately with lemon wedges.
