Korean Cheese Corn
Ingredients:
2 cups canned or frozen corn kernels (about 1 can of corn, drained)
1 cup mayonnaise
1/2 cup shredded mozzarella cheese (or a blend of mozzarella and cheddar)
1/4 cup grated Parmesan cheese
1 tbsp sugar
1 tsp garlic powder
1 tbsp butter (optional, for richness)
1-2 tbsp chopped green onions (for garnish)
1 tbsp sesame seeds (optional, for garnish)
Red pepper flakes or a drizzle of hot sauce (optional, for a spicy kick)
Instructions:
Preheat the Oven:
Preheat your oven to 375°F (190°C). Lightly grease or line a small baking dish with parchment paper.
Prepare the Corn:
If you’re using canned corn, drain it well. If you’re using frozen corn, thaw and drain it.
In a mixing bowl, combine the corn with the mayonnaise, sugar, garlic powder, and half of the mozzarella cheese. Stir until well combined.
Assemble the Dish:
Transfer the corn mixture to your prepared baking dish and spread it evenly.
Sprinkle the remaining mozzarella cheese and grated Parmesan cheese on top.
Bake:
Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly and the top is lightly golden.
Garnish and Serve:
If desired, melt the butter in a small pan and drizzle it over the top of the dish after baking.
Garnish with chopped green onions, sesame seeds, and a sprinkle of red pepper flakes or hot sauce if you want a spicy kick.
