Kielbasa Cabbage Potato Skillet
Ingredients:
1 lb kielbasa sausage, sliced into rounds
4 cups green cabbage, chopped
4 medium potatoes, peeled and diced
1 large onion, diced
3 cloves garlic, minced
3 tablespoons olive oil
1 teaspoon smoked paprika
1/2 teaspoon dried thyme
Salt and black pepper, to taste
1/4 cup chicken broth (optional, for extra moisture)
Fresh parsley, chopped (for garnish, optional)
Instructions:
Prepare the Potatoes:
In a large pot of boiling salted water, cook the diced potatoes for 5-7 minutes until just tender but not falling apart. Drain and set aside.
Cook the Kielbasa:
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the sliced kielbasa and cook until browned on both sides, about 5-7 minutes. Remove from the skillet and set aside.
Sauté the Vegetables:
In the same skillet, add the remaining 2 tablespoons of olive oil. Add the diced onion and cook until softened, about 3-4 minutes.
Add the minced garlic and cook for another 1 minute until fragrant.
Combine Ingredients:
Add the chopped cabbage to the skillet and cook until it begins to wilt, about 5 minutes.
Stir in the cooked potatoes, kielbasa, smoked paprika, dried thyme, salt, and black pepper. If the mixture seems dry, add the chicken broth for extra moisture.
Cook Together:
Continue to cook, stirring occasionally, until everything is well combined and heated through, about 10 minutes.
Serve:
Garnish with fresh chopped parsley if desired. Serve hot.
