Kentucky Butter Cake Cookies Recipe

Ingredients:
For the Cookies:
1 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 cup buttermilk
For the Butter Glaze:
1/2 cup unsalted butter
1/2 cup granulated sugar
2 tablespoons water
1 teaspoon vanilla extract

Instructions:
Preheat the Oven:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
Prepare the Cookie Dough:
In a large mixing bowl, cream together the softened butter and sugar until light and fluffy (about 2-3 minutes).
Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
In a separate bowl, whisk together the flour, baking powder, salt, and baking soda.
Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Mix until just combined. Be careful not to overmix.
Scoop and Bake:
Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake for 10-12 minutes, or until the edges are set and slightly golden but the centers are still soft.
Prepare the Butter Glaze:
While the cookies are baking, make the butter glaze. In a small saucepan, melt the butter over medium heat. Stir in the sugar and water, and cook, stirring constantly, until the sugar is dissolved.
Remove from heat and stir in the vanilla extract.
Glaze the Cookies:
Once the cookies are out of the oven, let them cool for a few minutes. While still warm, brush or drizzle the butter glaze generously over the tops of the cookies.
Cool and Serve:
Let the cookies cool completely to allow the glaze to set. Enjoy!
