Juicy Chicken Ricotta Meatballs
Ingredients:
1 lb ground chicken
1/2 cup ricotta cheese
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 egg
2 cloves garlic, minced
2 tablespoons fresh parsley, chopped
1 teaspoon Italian seasoning
Salt and pepper to taste
Olive oil for frying
Marinara sauce (optional for serving)
Directions:
In a large bowl, combine the ground chicken, ricotta cheese, breadcrumbs, Parmesan cheese, egg, garlic, parsley, Italian seasoning, salt, and pepper. Mix until just combined; do not overmix.
Shape the mixture into 1.5-inch meatballs.
Heat olive oil in a large skillet over medium heat. Add the meatballs and cook for 8-10 minutes, turning occasionally, until browned and cooked through.
Serve the meatballs with marinara sauce if desired, or enjoy them on their own.
