John Wayne Casserole
Ingredients:
1 lb (450g) ground beef
1 small onion, diced
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) diced tomatoes
1 can (4 oz) green chilies, diced
1 cup frozen corn
1 cup sour cream
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1 cup crushed tortilla chips
1 tablespoon taco seasoning
1 teaspoon garlic powder
1 teaspoon cumin
1/2 teaspoon paprika
Salt and black pepper to taste
Fresh cilantro for garnish (optional)
Directions:
Cook the Beef:
In a large skillet, cook the ground beef and diced onion over medium heat until the beef is browned and the onion is softened. Drain excess fat if necessary.
Stir in the taco seasoning, garlic powder, cumin, paprika, salt, and black pepper. Cook for another 1-2 minutes until the spices are fragrant.
Prepare the Casserole Mixture:
Preheat the oven to 350°F (175°C).
In a large mixing bowl, combine the cooked beef mixture, black beans, diced tomatoes, green chilies, frozen corn, and sour cream. Mix well.
Assemble the Casserole:
Spread the beef mixture evenly in a greased 9×13-inch baking dish.
Top with shredded cheddar cheese and Monterey Jack cheese.
Sprinkle crushed tortilla chips evenly over the top.
Bake the Casserole:
Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
Garnish with fresh cilantro if desired before serving.
