John Wayne Casserole
Ingredients:
1 lb ground beef
1 packet taco seasoning
1/2 cup water
1 can (10 oz) diced tomatoes with green chilies, drained
1 can (4 oz) diced green chilies, drained
1 medium onion, chopped
1 cup sour cream
1 cup mayonnaise
1 cup cheddar cheese, shredded
2 cups biscuit mix (such as Bisquick)
1/2 cup milk
2 cups shredded cheese (cheddar or a blend)
1/2 tsp garlic powder
1/2 tsp onion powder
Salt and pepper to taste
Directions:
Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish and set aside.
Cook the Ground Beef: In a skillet over medium heat, cook the ground beef until browned and fully cooked, breaking it into crumbles as it cooks. Drain excess fat, then add taco seasoning and water. Simmer for 5 minutes.
Prepare the Biscuit Base: In a medium bowl, mix the biscuit mix and milk together to form a dough. Press the dough evenly into the bottom of the greased baking dish to form the base.
Layer the Ingredients: Layer the cooked ground beef evenly over the biscuit dough. Next, spread the diced tomatoes with green chilies and diced green chilies over the beef.
Mix Sour Cream Topping: In a small bowl, mix together sour cream, mayonnaise, chopped onion, garlic powder, onion powder, salt, and pepper. Spread this mixture over the top of the chili layer.
Add Cheese: Sprinkle 2 cups of shredded cheese evenly over the sour cream mixture.
Bake: Bake in the preheated oven for 30-35 minutes or until the cheese is melted, bubbly, and the edges are golden brown.
Serve: Let the casserole cool for a few minutes before slicing and serving.
