Italian Gnocchi with Sausage, Mushrooms, and Spinach in Creamy Sauce
Ingredients:
1 lb potato gnocchi (fresh or frozen)
1 tbsp olive oil
1/2 lb Italian sausage, crumbled
1 cup mushrooms, sliced
2 cloves garlic, minced
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
2 cups fresh spinach, chopped
Salt and pepper to taste
Directions:
Cook the gnocchi according to the package directions. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add the crumbled sausage and cook until browned, about 5-7 minutes.
Add the sliced mushrooms and garlic to the skillet and cook for another 3-4 minutes until the mushrooms are tender.
Stir in the heavy cream and bring to a simmer. Let the sauce cook for 3-5 minutes, thickening slightly.
Add the Parmesan cheese, chopped spinach, salt, and pepper. Stir until the spinach wilts and the cheese melts into the sauce.
Add the cooked gnocchi to the skillet and toss to combine, ensuring the gnocchi is coated in the creamy sauce.
Serve warm, garnished with additional Parmesan and fresh herbs if desired
