Irresistible Italian Chicken, Potato, and Green Bean Bake
Ingredients:
4 boneless, skinless chicken breasts
4 medium potatoes, sliced into rounds
2 cups green beans, trimmed
1 tablespoon olive oil
1 teaspoon dried Italian seasoning
1 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and black pepper, to taste
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh parsley (optional)
Directions:
Preheat your oven to 400°F (200°C). Grease a baking dish or line it with parchment paper.
In a large bowl, toss the potato slices with olive oil, Italian seasoning, garlic powder, onion powder, salt, and pepper until well coated.
Arrange the potato slices in a single layer in the prepared baking dish.
Place the chicken breasts on top of the potatoes and season them with a bit more salt and pepper.
Scatter the green beans around the chicken and potatoes.
Sprinkle the Parmesan cheese evenly over the top of the chicken and vegetables.
Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the potatoes are tender.
If desired, garnish with fresh parsley before serving.
