Ingredients:
For the Blueberry Filling:
4 cups fresh or frozen blueberries
1/2 cup granulated sugar
2 tablespoons cornstarch
1 tablespoon lemon juice
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
For the Cobbler Topping:
1 cup all-purpose flour
1/4 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk
1/4 cup unsalted butter, melted
1 teaspoon vanilla extract

Directions:
Preheat Oven:
Preheat your oven to 375°F (190°C).
Prepare Blueberry Filling:
In a large mixing bowl, combine the blueberries, granulated sugar, cornstarch, lemon juice, vanilla extract, cinnamon, and salt. Toss gently to coat the blueberries and set aside for about 10 minutes to allow the juices to release.
Make the Cobbler Topping:
In another bowl, whisk together the flour, sugar, baking powder, and salt.
Add the milk, melted butter, and vanilla extract, stirring until just combined. The batter will be slightly lumpy.
Assemble the Cobbler:
Pour the blueberry filling into a greased 9×9-inch baking dish, spreading it evenly.
Spoon the cobbler topping over the blueberries, allowing some of the fruit to peek through (don’t worry about it being perfectly smooth).
Bake:
Bake in the preheated oven for 30-35 minutes, or until the topping is golden brown and a toothpick inserted into the topping comes out clean.
Cool and Serve:
Allow the cobbler to cool for about 10-15 minutes before serving. This will help the filling thicken up a bit.
Serving Suggestions:
Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream for an extra indulgence!
