A hearty and cheesy twist on traditional nachos—made with crispy potato rounds instead of chips. Perfect for game day, parties, or pub-style snacks at home!

🥔 Ingredients:
3–4 large russet potatoes, sliced into ¼-inch rounds

Olive oil, for brushing

Salt and pepper, to taste

2 cups cheddar cheese, shredded (or more if you’re feeling cheesy!)

½ cup turkey bacon, cooked and chopped (or use regular bacon if you prefer)

½ cup sour cream or Mexican crema

¼ cup chives or green onions, finely chopped

🔥 Instructions:
Preheat Oven:

Preheat your oven to 400°F (200°C).

Line a large baking sheet with parchment paper or foil for easy cleanup.

Prepare the Potatoes:

Slice potatoes into ¼-inch thick rounds.

Toss or brush with olive oil, and season both sides with salt and pepper.

Bake Until Crispy:

Arrange the potato slices in a single layer on the baking sheet.

Bake for 20–25 minutes, flipping halfway through, until golden brown and slightly crisp.

Add Toppings & Melt Cheese:

Once baked, transfer the potato rounds to an oven-safe dish or leave them on the sheet.

Sprinkle with shredded cheddar and chopped bacon.

Return to oven and bake for 5–7 minutes until the cheese is melted and bubbly.

Garnish & Serve:

Drizzle with sour cream or crema, and sprinkle with chives or green onions.

Serve immediately while warm and gooey!
