Ingredients:
For the Dumplings:
2 cups self-rising flour
¼ cup shortening or lard
¾ cup boiling water
Directions:
Make the Dough:
Place the self-rising flour in a large mixing bowl. Using a pastry blender or a fork, cut in the shortening or lard until the mixture resembles coarse crumbs.
Slowly add the boiling water, a little at a time, stirring until the dough comes together and can be shaped into a ball.
For Flat Dumplings:
Lightly flour a clean surface and roll out the dough to about ⅛ inch thickness.
Using a pizza cutter or sharp knife, cut the dough into strips, then into squares. Set aside.
For Drop Dumplings:
Skip the rolling—just pinch off small pieces of dough in your desired size for a rustic drop-dumpling style.
Cook the Dumplings:
Bring your soup, broth, or fruit mixture to a gentle boil. Drop in a few dumplings at a time to prevent sticking. Cover the pot with a lid and let them cook undisturbed for a few minutes.
Continue adding more dumplings in batches.
Once all the dumplings are in, reduce the heat to a simmer. Cover and cook for about 20 minutes, until the dumplings are tender and fluffy.
Serve:
Ladle the hot dumplings into bowls with plenty of broth or fruit, and enjoy warm. These dumplings are perfect for classic chicken and dumplings, hearty stews, or even sweet fruit cobblers.
