Honey Pineapple Grilled Chicken
Ingredients:
4 boneless, skinless chicken breasts
1/2 cup pineapple juice
1/4 cup honey
2 tbsp soy sauce
2 tbsp olive oil
2 cloves garlic, minced
1 tbsp fresh lime juice
1 tsp ground ginger
Salt and pepper to taste
Fresh cilantro (optional, for garnish)
Directions:
Prepare the Marinade: In a medium bowl, whisk together pineapple juice, honey, soy sauce, olive oil, garlic, lime juice, ginger, salt, and pepper.
Marinate the Chicken: Place the chicken breasts in a large zip-top bag or shallow dish and pour the marinade over the chicken. Seal or cover, then refrigerate for at least 1 hour, or up to 4 hours for more flavor.
Preheat the Grill: Preheat your grill to medium-high heat. Lightly oil the grill grates to prevent sticking.
Grill the Chicken: Remove the chicken from the marinade (discard any remaining marinade). Grill the chicken for 6-8 minutes per side, or until it reaches an internal temperature of 165°F (75°C) and has nice grill marks.
Serve: Once cooked, remove the chicken from the grill and let it rest for a few minutes. Garnish with fresh cilantro if desired. Serve with your favorite side dishes.
