Honey Garlic Chicken Thighs
Ingredients:
6 bone-in, skin-on chicken thighs
Salt and pepper, to taste
2 tbsp olive oil
⅓ cup honey
¼ cup soy sauce (low sodium recommended)
5 garlic cloves, minced
1 tbsp apple cider vinegar (or rice vinegar)
1 tsp fresh ginger, minced (optional)
Chopped parsley or green onions for garnish
Directions:
Season and Sear: Preheat oven to 400°F (200°C). Season chicken thighs with salt and pepper. Heat olive oil in a large oven-safe skillet over medium-high heat. Place chicken thighs skin-side down and sear for 5-6 minutes, until golden and crispy. Flip and sear the other side for 2-3 minutes. Remove chicken and set aside.
Make Sauce: In the same skillet, add minced garlic and ginger (if using). Sauté for 1-2 minutes until fragrant. Add honey, soy sauce, and vinegar, stirring to combine. Simmer for 2-3 minutes until the sauce slightly thickens.
Bake with Sauce: Return chicken thighs to the skillet, skin-side up. Spoon sauce over the thighs and transfer the skillet to the oven. Bake for 20-25 minutes, basting with sauce halfway through, until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
Serve: Remove from oven, garnish with chopped parsley or green onions, and serve with rice or vegetables.
