Honey Garlic Butter Roasted Carrots

Ingredients:
2 lbs (900g) carrots, peeled and cut into sticks or left whole if small
1/4 cup (60g) unsalted butter, melted
3 tablespoons honey
3 garlic cloves, minced
1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
Salt and pepper, to taste
Fresh parsley, chopped (optional, for garnish)

Directions:
Prepare the Oven:
Preheat your oven to 425°F (220°C).
Line a baking sheet with parchment paper or lightly grease it.
Prepare the Carrots:
If your carrots are large, cut them into sticks. If they are small, you can leave them whole.
Place the prepared carrots on the baking sheet.
Make the Honey Garlic Butter:
In a small bowl, mix the melted butter, honey, minced garlic, and thyme until well combined.
Coat the Carrots:
Pour the honey garlic butter mixture over the carrots.
Toss the carrots until they are evenly coated.
Season with salt and pepper to taste.
Roast the Carrots:
Spread the carrots out in a single layer on the baking sheet.
Roast in the preheated oven for 25-30 minutes, or until the carrots are tender and caramelized, stirring halfway through for even roasting.
Serve:
Remove from the oven and transfer the carrots to a serving dish.
Garnish with freshly chopped parsley if desired.
Serve warm as a delicious side dish.
