Honey Garlic Butter Roasted Carrots

Ingredients:
1 lb. carrots, peeled and cut into sticks or left whole if using baby carrots
3 tablespoons unsalted butter, melted
2 tablespoons honey
3 garlic cloves, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon fresh thyme (optional)
1 tablespoon chopped fresh parsley for garnish

Directions:
Preheat the Oven:
Preheat your oven to 400°F (200°C).
Prepare the Carrots:
If using large carrots, peel and cut them into sticks about 2-3 inches long.
If using baby carrots, you can leave them whole.
Make the Honey Garlic Butter:
In a small bowl, combine the melted butter, honey, minced garlic, salt, pepper, and fresh thyme (if using).
Whisk until the mixture is well combined.
Toss the Carrots:
Place the carrots in a large mixing bowl.
Pour the honey garlic butter mixture over the carrots and toss until they are evenly coated.
Roast the Carrots:
Spread the carrots out in a single layer on a baking sheet lined with parchment paper or a lightly greased baking dish.
Roast in the preheated oven for 25-30 minutes, or until the carrots are tender and caramelized, stirring halfway through the cooking time.
Garnish and Serve:
Remove the carrots from the oven and transfer them to a serving dish.
Garnish with chopped fresh parsley.
