Honey Garlic Butter Roasted Carrots

Ingredients:
1 lb (500g) baby carrots, peeled
2 tablespoons unsalted butter, melted
2 tablespoons honey
2 cloves garlic, minced
1 tablespoon olive oil
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)

Directions:
Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Prepare the Carrots: In a large mixing bowl, whisk together melted butter, honey, minced garlic, olive oil, salt, and pepper. Toss the baby carrots in the mixture, making sure they are evenly coated.
Roast the Carrots: Spread the carrots in a single layer on the prepared baking sheet. Roast for 25-30 minutes, stirring halfway through, until the carrots are tender and caramelized.
Garnish and Serve: Remove from the oven and garnish with freshly chopped parsley before serving.
