Honey Garlic Butter Roasted Carrots

Ingredients:
1 lb (450g) baby carrots or regular carrots, peeled and cut into sticks
3 tablespoons unsalted butter
3 tablespoons honey
3 cloves garlic, minced
1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
Salt and pepper to taste
Fresh parsley, chopped (for garnish)

Directions:
Preheat the Oven:
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.
Prepare the Carrots:
If using regular carrots, peel and cut them into uniform sticks for even cooking.
Make the Honey Garlic Butter:
In a small saucepan over medium heat, melt the butter. Once melted, add honey, minced garlic, thyme, salt, and pepper. Stir until well combined and fragrant, about 1-2 minutes.
Toss the Carrots:
In a large bowl, toss the carrots with the honey garlic butter mixture until evenly coated.
Roast the Carrots:
Spread the coated carrots in a single layer on the prepared baking sheet. Make sure they are not overcrowded to ensure even roasting.
Bake:
Roast in the preheated oven for 20-25 minutes, or until the carrots are tender and lightly caramelized, stirring halfway through for even cooking.
Garnish and Serve:
Once done, remove from the oven and transfer the carrots to a serving dish. Drizzle any remaining honey garlic butter from the pan over the top and sprinkle with chopped fresh parsley for color and flavor.
