Honey Garlic Butter Roasted Carrots

Ingredients:
2 pounds carrots, peeled and cut into sticks (or use baby carrots)
3 tablespoons unsalted butter, melted
2 tablespoons honey
3 cloves garlic, minced
1 tablespoon olive oil
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)

Instructions:
1. Preheat the Oven:
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
2. Prepare the Honey Garlic Butter:
In a small bowl, whisk together the melted butter, honey, minced garlic, and olive oil.
3. Coat the Carrots:
Place the carrots in a large bowl or directly on the prepared baking sheet.
Pour the honey garlic butter mixture over the carrots, and toss to coat them evenly.
Season with salt and pepper to taste.
4. Roast the Carrots:
Spread the carrots out in a single layer on the baking sheet.
Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the carrots are tender and caramelized at the edges.
5. Garnish and Serve:
Remove the carrots from the oven and garnish with freshly chopped parsley.
Serve hot.
