Homemade Potato Soup
Ingredients:
4 large russet potatoes, peeled and diced
1 medium onion, diced
2 cloves garlic, minced
3 tablespoons unsalted butter
4 cups chicken or vegetable broth
1 cup milk (whole or 2%)
1 cup heavy cream
1 teaspoon salt (adjust to taste)
1/2 teaspoon black pepper (adjust to taste)
1/2 teaspoon dried thyme (optional)
1/2 teaspoon dried rosemary (optional)
1/4 cup all-purpose flour
1 cup shredded cheddar cheese
4 strips bacon, cooked and crumbled (optional)
2 green onions, sliced (optional)
Fresh parsley, chopped (for garnish, optional)
Directions:
Prepare the Potatoes:
Peel and dice the potatoes into small cubes. Set aside.
Sauté Vegetables:
In a large pot, melt the butter over medium heat. Add the diced onion and cook until softened, about 5 minutes.
Add the minced garlic and cook for another 1-2 minutes, until fragrant.
Cook the Potatoes:
Add the diced potatoes to the pot and cook for a few minutes, stirring occasionally.
Add Broth and Simmer:
Pour in the chicken or vegetable broth, ensuring the potatoes are covered. Bring the mixture to a boil.
Reduce heat to low, cover, and let it simmer for about 15-20 minutes, or until the potatoes are tender and easily pierced with a fork.
Thicken the Soup:
In a small bowl, whisk together the flour with a bit of milk to create a smooth paste. Gradually add the paste to the pot, stirring continuously.
Cook for an additional 5 minutes, or until the soup has thickened.
Blend the Soup:
For a smoother texture, use an immersion blender to blend the soup directly in the pot. Alternatively, carefully transfer the soup in batches to a regular blender and blend until smooth. If you prefer a chunkier texture, blend only half of the soup and leave some potato chunks.
Add Dairy and Seasonings:
Stir in the milk and heavy cream. Adjust the seasoning with salt, pepper, thyme, and rosemary.
Continue to cook for another 5 minutes, allowing the soup to heat through.
Add Cheese:
Stir in the shredded cheddar cheese until melted and fully incorporated.
Serve:
Ladle the soup into bowls and top with crumbled bacon, sliced green onions, and fresh parsley, if desired.
