Ingredients:
2 cups fresh pineapple, peeled, cored, and chopped
1/2 cup granulated sugar
1 cup heavy cream
1 cup whole milk
1 tablespoon lemon juice
1 teaspoon vanilla extract
Pinch of salt

Directions:
Prepare the Pineapple:
Place the chopped pineapple in a blender or food processor.
Blend until smooth, scraping down the sides as needed.
Strain the pineapple puree through a fine-mesh sieve into a bowl to remove any pulp. You should have about 1 1/2 cups of pineapple juice.
Mix the Ingredients:
In a large bowl, combine the pineapple juice and granulated sugar. Stir until the sugar is fully dissolved.
Add the heavy cream, whole milk, lemon juice, vanilla extract, and a pinch of salt. Stir to combine.
Chill the Mixture:
Cover the bowl with plastic wrap and refrigerate the mixture for at least 2 hours, or until it is thoroughly chilled.
Churn the Ice Cream:
Pour the chilled mixture into an ice cream maker.
Churn according to the manufacturer’s instructions, usually for about 20-25 minutes, or until the ice cream reaches a soft-serve consistency.
Serve:
Transfer the soft serve ice cream to a container with a lid.
Freeze for an additional 1-2 hours to firm up slightly if desired.
Serve the homemade pineapple soft serve in bowls or cones, and enjoy!

Garnish with fresh pineapple chunks, a drizzle of pineapple syrup, or a sprinkle of toasted coconut for extra flavor and texture.
Storage:
