Homemade Pierogi
Ingredients:
Dough:
2 cups all-purpose flour
1 large egg
½ cup sour cream
¼ cup butter, melted
Pinch of salt
Potato and Cheese Filling:
1 cup mashed potatoes (about 2 medium potatoes, cooked and mashed)
½ cup shredded cheddar cheese
Salt and pepper, to taste
Butter and Onion Topping:
¼ cup butter
1 medium onion, sliced
Directions:
Make Dough: In a large bowl, mix together flour and salt. Add the egg, sour cream, and melted butter. Knead until a soft dough forms, about 5-7 minutes. Cover and let rest for 30 minutes.
Prepare Filling: In a separate bowl, combine the mashed potatoes and cheddar cheese. Season with salt and pepper to taste.
Assemble Pierogi: Roll out the dough on a floured surface to about ⅛-inch thickness. Use a round cutter (about 3 inches in diameter) to cut circles from the dough. Place a teaspoon of filling in the center of each circle, fold over to form a half-moon, and press edges together to seal.
Cook Pierogi: Bring a large pot of salted water to a boil. Gently drop pierogi in batches and cook until they float, about 2-3 minutes. Remove with a slotted spoon and set aside.
Pan-Fry with Butter and Onions: In a skillet, melt butter over medium heat. Add sliced onion and cook until caramelized. Add cooked pierogi and sauté until golden on both sides.
