Ingredients

1 cup cauliflower florets
1 cup carrot slices (thin rounds or sticks)
1 cup cucumber rounds
1/2 cup green beans, trimmed
1/2 cup red bell pepper strips

2 cups water
1 cup white vinegar
2 tbsp sugar
1 tbsp salt
2 tsp mustard seeds
1 tsp black peppercorns
1 tsp red chili flakes
2 garlic cloves, smashed
1 bay leaf
Instructions
1. Prepare the Vegetables:
Wash and cut all vegetables into bite-sized pieces. Blanch green beans and cauliflower in boiling water for 1 minute, then transfer to an ice bath to retain crispness.
2. Prepare the Brine:
In a saucepan, combine water, vinegar, sugar, salt, mustard seeds, black peppercorns, red chili flakes, garlic, and the bay leaf.
Bring to a boil, stirring to dissolve the sugar and salt. Remove from heat and let cool slightly.
3. Assemble the Jar:
In a clean, square-shaped glass jar, layer the prepared vegetables to create a colorful pattern.
Pour the warm brine over the vegetables, ensuring they are fully submerged.
4. Seal and Store:
Seal the jar tightly and let it cool to room temperature.
Refrigerate for at least 24 hours to allow the flavors to meld. For the best taste, wait 3-5 days.
