📝 Ingredients
-
8 chicken drumsticks or thighs
-
1 cup buttermilk
-
1½ cups all-purpose flour
-
1 tsp paprika
-
1 tsp garlic powder
-
1 tsp onion powder
-
1 tsp dried oregano
-
½ tsp dried thyme
-
½ tsp black pepper
-
1 tsp salt
-
3 tbsp melted butter or oil spray (for baking)
🍽️ Directions
1️⃣ Marinate the Chicken
Place chicken pieces in a bowl or zip-top bag. Pour buttermilk over the chicken, ensuring all pieces are coated. Cover and refrigerate for at least 1 hour (overnight for best flavor).
2️⃣ Preheat & Prep
Preheat oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top. Lightly grease the rack with oil or cooking spray.
3️⃣ Mix the Coating
In a shallow bowl, combine flour, paprika, garlic powder, onion powder, oregano, thyme, salt, and black pepper. Mix well.
4️⃣ Coat the Chicken
Remove chicken from buttermilk, letting excess drip off. Dredge each piece thoroughly in the seasoned flour, pressing gently so the coating sticks.
5️⃣ Arrange for Baking
Place coated chicken pieces on the prepared wire rack, leaving space between each piece. Brush lightly with melted butter or spray with oil.
6️⃣ Bake Until Crispy
Bake for 40–45 minutes, flipping halfway through, until the coating is golden and the internal temperature reaches 165°F (74°C).
7️⃣ Rest & Serve
Let chicken rest for 5 minutes before serving. Enjoy hot and crispy with your favorite sides.
