Homemade Dulce de Leche

Ingredients:
– 1 liter of whole milk
– 300 grams of sugar
– 1/2 tsp of baking soda
– 1 vanilla bean (optional)

Instructions:
1. In a large, heavy-bottomed pot, combine the milk, sugar, and baking soda. If using a vanilla bean, split it open, scrape out the seeds, and add both the seeds and the pod to the pot.
2. Place the pot over medium heat, stirring constantly until the sugar is fully dissolved. Once the mixture begins to boil, reduce the heat to low.
3. Allow the mixture to simmer gently, stirring occasionally to prevent it from sticking to the bottom. As it simmers, it will gradually thicken and darken in color.
4. Continue cooking for about 1.5 to 2 hours, or until the mixture reaches a deep caramel color and a thick consistency. Keep an eye on it, especially towards the end, as it can burn easily.
5. Once the desired consistency is reached, remove the pot from the heat. If you used a vanilla bean, remove the pod.
6. Allow the dulce de leche to cool slightly before transferring it to a clean jar or container. It will thicken further as it cools.
7. Store in the refrigerator and use as a spread, filling, or topping for your favorite desserts.
