Homemade Chicken Taquitos

Ingredients:
For the Chicken Filling:
2 cups cooked chicken breast, shredded (about 2 large breasts)
1 tablespoon olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon chili powder
1/2 teaspoon dried oregano
1/4 teaspoon cayenne pepper (optional, for extra heat)
Salt and pepper to taste
1 cup shredded cheese (cheddar or Mexican blend)
1/4 cup chopped fresh cilantro (optional)
1/2 cup salsa or tomato sauce
For the Taquitos:
12 small corn or flour tortillas
Vegetable oil, for frying (or you can bake for a healthier option)
For Baking (optional):
Cooking spray

Directions:
Prepare the Chicken Filling:
Heat olive oil in a large skillet over medium heat.
Add the chopped onion and cook until softened and translucent, about 4-5 minutes.
Add the minced garlic and cook for an additional 1-2 minutes, until fragrant.
Stir in the cumin, paprika, chili powder, oregano, cayenne pepper (if using), salt, and pepper.
Add the shredded chicken and salsa (or tomato sauce), mixing until well combined and heated through.
Stir in the shredded cheese and cilantro (if using) until the cheese is melted and the mixture is creamy. Remove from heat and set aside.
Assemble the Taquitos:
Heat the tortillas in a dry skillet or on a griddle over medium heat for about 30 seconds per side to make them pliable.
Place a few tablespoons of the chicken mixture in the center of each tortilla, then roll up tightly. Secure with a toothpick if needed.
Fry the Taquitos:
Heat vegetable oil in a large skillet over medium heat (about 1/4 inch deep).
Fry the taquitos in batches, turning occasionally, until golden brown and crispy, about 3-4 minutes per side.
Drain on paper towels and keep warm while frying the remaining taquitos.
For Baking:
Preheat oven to 400°F (200°C).
Place the taquitos on a baking sheet lined with parchment paper.
Lightly spray with cooking spray.
Bake for 15-20 minutes, turning halfway through, until golden and crispy.
Serve:
Serve the taquitos hot with your favorite toppings such as salsa, guacamole, sour cream, or shredded lettuce.
