Homemade Chicken Nuggets
Ingredients:
For the Nuggets:
1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
1 cup all-purpose flour
1/2 cup breadcrumbs (panko for extra crunch)
2 large eggs
1 tsp garlic powder
1 tsp onion powder
1/2 tsp paprika
1/2 tsp salt
1/2 tsp black pepper
1/4 cup grated Parmesan cheese (optional for added flavor)
Vegetable oil for frying
For the Dipping Sauce (optional):
1/2 cup mayonnaise
2 tbsp ketchup
1 tbsp Dijon mustard
1 tsp honey
1 tsp lemon juice
Directions:
Prep the Chicken Nuggets:
Pat the chicken pieces dry with paper towels.
In a medium bowl, whisk together the flour, garlic powder, onion powder, paprika, salt, and pepper.
In another bowl, beat the eggs.
Place the breadcrumbs (and Parmesan cheese, if using) in a third bowl.
Coat the Chicken:
Dredge each chicken piece in the flour mixture, shaking off any excess.
Dip the floured chicken into the beaten eggs, then coat it with breadcrumbs. Press lightly to ensure the breadcrumbs stick to the chicken.
Fry the Nuggets:
In a large skillet, heat about 1 inch of vegetable oil over medium heat until it reaches 350°F (175°C).
Working in batches, fry the chicken nuggets for 3-4 minutes on each side or until golden brown and cooked through (internal temperature should reach 165°F or 74°C).
Transfer the nuggets to a paper towel-lined plate to drain excess oil.
Prepare the Dipping Sauce (optional):
In a small bowl, mix together the mayonnaise, ketchup, Dijon mustard, honey, and lemon juice. Stir until smooth.
Serve:
Serve the chicken nuggets hot with the dipping sauce on the side.
